Made 3 small-medium sized pizzas today:
The winner was the new topping we tried: cream cheese on the base & pesto as another layer, followed by boiled & sliced potatoes, caramelised onions. Sprinkle black pepper and cheese to finish.
Felt like I was in Italy eating this! The flavours were real subtle and the base was divine. Light & filling at the same time :) Definitely a new favourite.

The base: crispy, thin puffy pastry base! It makes for a really good pizza base! Love it! This base is the same as the one used in the upside-down tomato tart. Not to mention, it’s really really easy to make (I got the recipe from twospoons.wordpress.com):
(Makes one 8” tart - but you can make it larger - the pastry will jsut be thinner)
Ingredients: 50g salted butter - chopped, 3/4 C plain flour, water
Method: Mix flour + butter together with a pastry cutter or a strong fork, until no butter bits are bigger than a pebble. Add cold water & mix in - until the mixture is shaggy. Use your hand to scrunch together the shaggy bits until it becomes a soft dough (add water if needed). Flatten into a disc & leave it in the fridge while prepping other ingredients. When needed - roll out the dough!
